Ingredients

  • 2 cups granulated sugar
  • 1 cup oil
  • 3 eggs
  • 2 cups flour
  • 3/4 cup rolled oats

  • Frosting:
  • 1/2 cup soft butter
  • 4 oz cream cheese, softened
  • 2 tsp vanilla
  • 2 1/2 cups powdered sugar

Instructions

  1. Cream sugar, oil, and eggs.
  2. Combine flour, cinnamon, salt, and baking soda. Add to the egg mixture.
  3. Fold in zucchini, oats, carrot, vanilla, and nuts.
  4. Pour into a jelly roll pan.
