Peanut Clusters With Cream Cheese Centers
Ingredients
- 2 oz cream cheese, softened
- 1/2 tsp vanilla
- ~2 cups powdered sugar
- 12 oz bag semi-sweet chocolate chips (do not use imitation)
- 10 oz white almond bark (half a brick)
- 10 oz salted Spanish peanuts (make sure they are salted)
Notes
For the centers, add enough powdered sugar to the cream cheese and vanilla to make the consistency of Play-Dough. Roll into 1/2" size balls and refrigerate to set.
Melt chocolate chips and white almond bark together in the microwave.
Once melted, stir in peanuts.
Using two spoons (and having another person is helpful), add a center to one spoonful of peanut cluster mixture and cover it with another spoonful.
Drop on to waxed paper making sure that the chocolate covers the center completely.
The peanuts that fall between the clusters are delicious chocolate covered peanuts for the baker to enjoy!
