Stir-Fry:

1 bunch (about 4 cups) broccoli florets, diced

3 stalks celery, diced

3 green onions with tops, diced

2 tsp finely chopped, peeled fresh ginger root or ½ tsp ground ginger

1 pound boneless, skinless chicken breasts, cut into 1" pieces

4 tsp vegetable oil or olive oil, divided

2 garlic cloves, or 1 tsp minced garlic; divided

2 packages (3oz each) ramen noodles, any flavor

½ cup cashews

Sauce:
-
½ cup chicken broth
-
1 Tbsp creamy peanut butter
-
6 Tbsp reduced-sodium soy sauce
-
3 Tbsp honey
-
Dash of ground red pepper
Instructions
- Combine sauce ingredients and whisk well. Mixture will not be smooth. Set aside.
- Cut, chop, and dice the chicken and all vegetables. Place in separate prep bowls and set aside before stir-frying.
- Heat 2 tsp of oil in a stir-fry skillet over high heat until hot. Add chicken, ginger, and ½ of the garlic. Cook and stir 6-7 minutes or until chicken is no longer pink. Remove from skillet and keep warm.
- Reduce heat to medium-high. Heat remaining 2 tsp oil. Add broccoli and celery. Cook and stir 2 minutes. Add green onions and remaining garlic. Continue cooking 2 minutes or until vegetables are crisp-tender.
- Return chicken to skillet. Stir in sauce and bring to a boil. Remove skillet from heat.
- Meanwhile, bring 4 cups of water to a boil in a small saucepan. Break noodles and add to boiling water. Discard seasoning packets or save for another use. Cook for 3 minutes, stirring occasionally; drain. Stir noodles into chicken mixture. Sprinkle with cashews. Serve immediately.
