Cashew Chicken & Broccoli Stir-Fry

Ingredients

  • Stir-Fry:
  • 1 bunch (about 4 cups) broccoli florets, diced
  • 3 stalks celery, diced
  • 3 green onions with tops, diced
  • 2 tsp finely chopped, peeled fresh ginger root or ½ tsp ground ginger
  • 1 pound boneless, skinless chicken breasts, cut into 1" pieces
  • 4 tsp vegetable oil or olive oil, divided
  • 2 garlic cloves, or 1 tsp minced garlic; divided
  • 2 packages (3oz each) ramen noodles, any flavor
  • ½ cup cashews
  • Sauce:
  • ½ cup chicken broth
  • 1 Tbsp creamy peanut butter
  • 6 Tbsp reduced-sodium soy sauce
  • 3 Tbsp honey
  • Dash of ground red pepper

Instructions

  1. Combine sauce ingredients and whisk well. Mixture will not be smooth. Set aside.
  2. Cut, chop, and dice the chicken and all vegetables. Place in separate prep bowls and set aside before stir-frying.
  3. Heat 2 tsp of oil in a stir-fry skillet over high heat until hot. Add chicken, ginger, and ½ of the garlic. Cook and stir 6-7 minutes or until chicken is no longer pink. Remove from skillet and keep warm.
  4. Reduce heat to medium-high. Heat remaining 2 tsp oil. Add broccoli and celery. Cook and stir 2 minutes. Add green onions and remaining garlic. Continue cooking 2 minutes or until vegetables are crisp-tender.
  5. Return chicken to skillet. Stir in sauce and bring to a boil. Remove skillet from heat.
  6. Meanwhile, bring 4 cups of water to a boil in a small saucepan. Break noodles and add to boiling water. Discard seasoning packets or save for another use. Cook for 3 minutes, stirring occasionally; drain. Stir noodles into chicken mixture. Sprinkle with cashews. Serve immediately.
