When my friend, Khris made “Funfetti” cookies, I immediately asked her for the recipe, to which she told me the recipe was right off the Pillsbury Funfetti Cake Mix Box. So I bought a Funfetti cake mix (on sale, of course) and cut out the recipe for Funfetti Cookies from the box.
Heat oven to 375 degrees. Combine cake mix, oil and eggs until thoroughly moistened. Shape dough into 1″ balls and place 2″ apart on ungreased cookie sheet. Flatten cookie balls to 1/4″ thickness (I made mine slightly thicker) with bottom of glass dipped in flour (I used my fingers). Bake for 6-8 or until edges are golden brown. Cool one minute before removing from pan. Spread frosting over cookies and immediately sprinkle each with candy bits (optional). Let frosting set before storing. Store in tightly covered container (they don't even make it to the cooling point at our house). Since I've made my own version of Funfetti cake in the past with different brands of white cake mix by adding Rainbow Sprinkles to the batter, I decided to try making Funfetti cookies with a generic white cake mix and adding sprinkles.
